Skinny Oatmeal Brown Sugar Muffins



These oatmeal brown sugar muffins are a healthier take on a classic treat. They're tasty, moist, and great for a breakfast or snack without feeling bad about it.

Ingredients:

  • 1 cup old-fashioned oats
  • 1 cup unsweetened almond milk
  • 1/2 cup brown sugar
  • 1/4 cup unsweetened applesauce
  • 2 tablespoons vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup whole wheat flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 cup raisins optional
  • 1/4 cup chopped nuts optional

Instructions:

Preheat your oven to 375F 190C and line a muffin tin with paper liners

In a mixing bowl, combine the oats and almond milk

Let it sit for about 10 minutes to soften the oats

Stir in the brown sugar, applesauce, vegetable oil, and vanilla extract into the oat mixture

In a separate bowl, whisk together the whole wheat flour, baking soda, baking powder, salt, cinnamon, and nutmeg

Gradually add the dry ingredients to the wet ingredients and mix until just combined

Do not overmix

If desired, fold in the raisins and chopped nuts into the batter

Divide the batter evenly among the muffin cups, filling each about 2/3 full

Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean

Allow the muffins to cool in the pan for a few minutes, then transfer them to a wire rack to cool completely
