Ingredients:
- 1 lb ground beef
- 1 packet enchilada seasoning mix
- 1 cup enchilada sauce
- 1 cup shredded Mexican cheese blend
- 1/2 cup diced onions
- 1/4 cup chopped cilantro
- 8 slices sandwich bread
- 2 tablespoons butter
Instructions:
Cook the ground beef in a pan until it turns brown
Get rid of extra fat
Put enchilada sauce and enchilada seasoning mix in the pan
After you stir, let it cook for 5 minutes
Warm up a skillet or a panini press over medium heat
Each piece of bread should have one side brushed with butter
On the panini press or skillet, put a slice of bread with the butter side down
Place a large amount of the beef mixture on top
Then add diced onions, cilantro, and shredded cheese
Spread butter on one more slice of bread and put it on top
About 34 minutes on each side, grill or press the bread until it turns golden brown and the cheese melts
Do it again with the rest of the ingredients to make more sandwiches
On a diagonal, cut the sandwiches and serve them hot
