This Paleo Lime Cilantro Coleslaw is a tasty and refreshing take on regular coleslaw. This is a great side dish for any Paleo or Keto meal. It's made with fresh cabbage, carrots, cilantro, and a tangy lime dressing.
Ingredients:
- 1/2 head green cabbage, thinly sliced
- 1/2 head red cabbage, thinly sliced
- 1 large carrot, grated
- 1/2 cup fresh cilantro, chopped
- 1/4 cup paleo mayonnaise
- 2 tablespoons lime juice
- 1 tablespoon apple cider vinegar
- 1 teaspoon honey or paleo-friendly sweetener
- Salt and pepper to taste
Instructions:
Cut up the red cabbage, green cabbage, carrot, and cilantro and put them all in a large bowl
Add the paleo mayonnaise, apple cider vinegar, honey or another sweetener, salt, and pepper to a small bowl
Use a whisk to mix the ingredients well
Add the dressing to the coleslaw and mix it all together until it's well covered
Put it in the fridge for at least 30 minutes before you serve it so the flavors can mix
